Fed up of eating usual crisps and other industrial biscuits ? For the aperitif, impress your friends by offering delicious Comté cheese gougères. These little cheese pastry puffs from Franche-Comté are very easy to make and above all very tasty!
Preheat the oven to 180°C (thermostat 6).
Place the butter in a saucepan and melt it over a low heat with the salt and 25 cl of water.
When it is well melted, add the flour in one go. Mix vigorously with a wooden spatula, until you obtain a homogeneous paste that comes away from the sides of the saucepan.
Add the eggs one by one, stirring well with the spatula.
Grate the Comté cheese and add it to the dough. Mix well to distribute it evenly.
Cover a baking tray with baking paper. Using two small spoons, place heaps of dough on the baking tray with sufficient space between them as they will swell during cooking.
Bake for 35 minutes. When the Comté gougères are golden brown, take them out of the oven and leave them to cool for 1 or 2 minutes to avoid burning yourself. Taste them lukewarm and enjoy! If you make a lot of them, you should know that they keep very well in the freezer for a month.
